How to make a wholesome healthy meal if there are limitations? 
Look no further than your fridge, your cupboard, your local market or garden.
The nachos were the unhealthy indulgence part paired well with the hummus (store bought). Traditionally tabouleh is made with bulgur or cous-cous, but I was out of bulgur and the other one didn't fit the requirements. The muffins were meant to be zucchini patties but suffered from identity crisis. 
I write this as a reminder that I will bounce back from my disappointment in myself. 
I will bounce back from this feeling of not being good enough.
I will bounce back and get back on track.
If everything else fails, at least I can stil cook and I haven't lost my creativity.
Just like the zucchini that was to be patties, it ended up in something more wholesome with more texture and more taste. If I was not meant to be part of something fancy, I might be  meant to be part of something bigger in volume, better in taste and better structured.
The wound will sting a bit more, the scar will be there for some time. But in the end the wound heals, the scar vanishes and I rise again and again and again. Just like a phoenix. Rise again.
