A Birthday Treat

I like my birthday. I like celebrating it. BC (before child) I had skipped 2 birthdays because with the SO we went on holiday in Greece. The first time we travelled and arrived quite late. The second time we travelled but arrived at decent time to treat ourselves to some Belgian beer. I remember wishing for a popping year, and so it was. 
Last year I celebrated my birthday without a party but with a sweet treat for those present at the Saturday coffee. It was my first big outing and leaving baby for 2 hours. 
This year is strange. Since the world stopped in March celebrating has changed for most people, at least. For example, for my son's first birthday his father was down with covid-19 and on the actual day of his birthday I was getting tested and we went into self-isolation. I didn't even get him cake. 
This year I decided to do something I like as a birthday present to myself. That something had to be manageable, sweet, low maintenance and bring no stress and much joy. Therefore, I decided to bake a second batch of gingerbread biscuits. 
The recipe is simple 300g flour, teaspoon baking soda, 2 tsp ground ginger, 1/2 tsp cinnamon, 1/2 tsp nutmeg, 125g good quality butter melted with 100g brown sugar and 2-3 tablespoons of honey. Then you mix the dry and wet ingredients, roll out the dough and cut out the biscuits. Simple, manageable, low maintenance even with a one-year old's help.
I end this post three days after staring it.
I end this year thankful for the good health, perseverance and small joys of life that help us see the light at the end of the tunnel even in the darkest of times.
