What to do when papers and deadlines are looming


I am supposed to do a research and write a paper. The deadline is looming over me like a dark cloud.
Yet everything I can think of is cooking.
I am thrilled to be able to make something sweet for the week three weeks in a row.
I am not excited that the excel charts and surveys remain unopened somewhere on the hard drive.
But let's be honest, what would you choose excel and data or chocolate salted caramel brownies?
Would you rather bang your head over how to formulate survey questions or
enjoy a week of juicy baklava, just like grandma made it? What's your poison, writing emails to survey
participants or savoring a creamy tiramisu? Three weeks, no exel charts, three different deserts.
Sounds like a challenge, but an accomplished one. 


Week 1 
Chocolate salted caramel brownies. 

I found this recipe on BBC good food. Of course I adjusted the dosage to my 2 people household and
it turned out brilliant. Here's my version:
100g unsalted butter
50g chocolate with 70%cocoa and 50g chocolate with 50%cocoa or use 100g chocolate 
198g caramel
100g or less sugar
2 eggs
65g flour
25-30g cocoa powder

Week 2
Baklava

This was a bit of a special occasion and following the tradition of my family I made baklava with
filo pastry, wallnuts and gritz soaked in sherbet. To be honest not that it wasn't delicious but
I still need practice in the sherbet department. 
By the way, baklava is very simple to make.
Arrange the filo pastry in 3 different levels and spread a mix of baked grits and walnuts between
the first and second level and between second and third level. Bake until golden brown,
cool off and pour hot sherbet on cold baklava. Enjoy a week of desert. 

Week 3 
Tiramisu

It takes an hour to make and approximately an hour to disappear
Boil/make 2cups strong coffee. One for you and one to dip the biscuits in.
Add marasala wine or rum or brand
Beat 4 yolks over boiling water at low heat with 3 levelled spoons of sugar until white and fluffy.
Add 250g marscapone cheese spoon by spoon and mix until incorporated.
Aside beat the 4 whites with the remaining sugar until stiff.
With a spatula slowly add the whites into the yolks and marscapone mix. 
Dunk the biscuits in the coffee and layer them in a pan. Cover with cream and repeat.
Finally, dust the last layer of cream with cocoa. Let it rest and enjoy your cup of coffee. 
And again instead of the deadline and the excel sheets I see puddings and deserts to
prepare for the weeks to come.
