When things don't turn out as planned...

It was supposed to be a relaxed weekend that would kick off with a bike ride, continue with some family time, a concert and a night out with colleagues, a Saturday swinging in a hammock by the river and a Sunday by the sea just us like in the good old days. And it was up to the concert and then things slowly started turning on their head. The phone went for a swim and events chose a different timeline. The swinging in the hammock by the river was replaced by the quest for the lost data followed by a mild sunstroke. The silver lining was the favourite summer dish prepared in less than 30 minutes.
For this you need 2 people, one with a mild sunstroke, the other one extremely hungry. Two  small aubergines and 2 courgettes. Garlic,  yogurt, salt and pepper and parsley if available.
One peels and slices the courgettes, the other one arranges them on a baking sheet. After filling two baking sheets with the courgettes and aubergines, sprinkle some oil over them and bake them simultaneously in a pre-heated oven for about 10 minutes on each side. in the meantime either make fresh shopska salad or read the newspaper. When the baked goods are done arrange them in a bowl one layer courgettes covered with yogurt, one layer aubergines followed by yogurt and don't forget salt, pepper and garlic. You can eat it right away or let it rest in the fridge and it gets even better. A compulsory desert is an afternoon nap.
Not-as-planned Saturday ended with the hope that Sunday would make up for the unpredicted events. And it all began well. The backpack packed, the swim-suit on and we were on the road. Forty minutes into the trip just as we had bought coffee and water for the road the phone rang. "I don't think wind and rain are a good weather for the beach." We turned the car and got home. Nothing of sitting in a local tavern and eating fish. I got home hungry. I raided the fridge and found some leftover frozen spinach. Probably this was the time to make the something out of that strange old cookbook I had come accross. And I made spinach balls easy peasy. If the spinach is frozen just crush the leaves, if not put it in a food processor. Add an egg and some breadcrumbs. Season and make balls. Bake them until golden brown Serve with a salad or with yogurt, kefir or labneh. When things don't turn out as planned cook and meditate. Probably it's for some greater good.
