The Midnight Banana Bread

What time the bread is made and baked that's a completely different story.

There they were sitting sadly on the counter forgotten, ignored  as an afternoon snack,overlooked on the way to work, simply disremembered.  Probably the fact that they had been ignored for several days upset them and made them turn dark. Probably turning dark was the best decision they had made to get noticed and used. Apparently it worked.

As the bananas were turning dark I was contemplating another recipe, knackerbrot, and riding on the bus I was making the list of ingredients and virtually checking the cupboard in my mind. When I got home the bananas caught my eye; either because they were turning dark or because they were on the counter just under the cupboard with all the teas. Our eyes* met and it was an instant decision. So 1/2 cup whole grain flour 3/4 regular flour 1 backing powder 1 egg beaten with one spoon of honey (or sugar white or brown) 2 spoons of oil some spices a bit of ginger to keep you warm, a bit of nutmeg to make you happy and a bit of cinamon to keep you healthy. And the two bananas pureed, of course. Preheat the oven at 200C. Beat the egg, add the oil and the bananas, add the dry ingredients slowly. Mix well and pour into a baking pan. Bake for 25-30 minutes.

Mine turned out just fine.Not very sweet, but I like it that way so that I can spread some jam on it or Nutella or avocado or dip it in sweet cocoa as a midnight snack on a school day.



*bananas don't have eyes but they looked so sad that it appeared to me these two had actually developed eyes trying to be noticed since Sunday last.
