Sunny spring mornings are perfect for practically everything. Bake a fresh batch of muffins, pack the thermos with coffee or tea and go to the park, nearest mountain, your balcony, anywhere and enjoy a snack with friends. The muffins are a no-brainer there is the small batch and the large batch. I opted for the second and of course I twisted the recipe a bit. Here it is 200g flour 80g coconut flour 180g sugar or something sweet (I made them diabetes friendly and used steviolina) vanilla and a packet of backing powder. The original recipe said tip of the knife backing powder and tip of the knife baking soda, but having two left hands unintentionally I emptied the whole 7g packet. You will also need 120ml oil and 250ml water. Mix the dry ingredients first and then add the wet ingredients. You can also add a pinch of salt which I saved it for some other time. When the dough is evenly mixed start filling the muffin cups leave some space from the brim for the muffins to raise and decorate each muffin with a raspberry or any other fresh or frozen berry. Don't forget to preheat the oven at 180 or 200 degrees C and bake for 20- 25 minutes depending on the oven. Voila, perfect morning, perfect muffins.
