What are your religious views? Umm.. hedonist, I presume.
Though chicken isn't as hedonist as a prosciutto....anyway I realized that I was quite happy on my own actually. What is more cooking for one makes me even happier, strange as it may sound. Well, what's a girl to do than to treat herself. I treated myself to nice chicken kebabs with black risotto with mushrooms.
The original recipe was for lime chicken kebabs (not the Balkan notion of "kebab"), but since lime is quite pricey here at the world's pit, I used apricot jam and lemon juice instead. First, you slice the chicken into thin pieces and thread it on skewers like a snake. Then you prepare the dressing marmalade, vinegar, lemon juice, salt and pepper to taste. Arrange the skewers on a grill and brush them generously with the dressing. grill them for 5 minutes or until golden brown then turn them over brush them with marinade again and grill until they turn golden red.
For the risotto use a recipe you know well. Mine is 1 to 3, meaning 1 measure rice and 3 measures liquid. 1 of the three is some alcoholic drink. This time it was red wine, resulting in black risotto. I also added champignons as they were handy, what is more I was craving them.
Voila, a very me, myself and I meal. (Of course, if you prefer, you can share it with more people :)
