Peppers and tomatoes pate known as PINDJUR
When life surprises you with an unexpected mini holiday use all the fresh green peppers in the fridge. With plans to spend the weekend at the seaside I was left with a kilo of lovely green peppers and a few tomatoes. As difficult times call for drastic measures, I had plucked up the courage and turned on the stove to bake the peppers, fortunately it wasn't too long, only half an hour. Having baked them I took them out and let them sit and cool packed in a bag wrapped in paper. Needless to say I had forgotten all about them. After 4 hours I remembered them, peeled them, and made a total mess, put them in the food processor until they turned into pate, added the mashed tomatoes and froze the pate. This meant only one thing- NO COOKING NEXT WEEK- my lunch needs only seasoning with salt pepper and oil. YUMMY pinjur with freshly baked bread and cheese. Life is amazing :)
