Chicken and Pomegranate
...and Love, Actually...

Here we are mid December, snow, cold, with cravings for tasty food.
Lately I've been obsessed with pomegranates, the ugly round beasts that open into caves full of juicy red jewels. Naturally I googled pomegranate and came with handfuls of lovely and tasty recipes. There was one that caught my eye. Simple yet seemed quite delicious and, of course, feasible.
Marinate the chicken breasts into 1/4 cup pomegranate juice 1/4 cup white wine 1-2 tbs vinegar. Leave it overnight or 1 hour prior to cooking. First fry up the meat for 2 minutes and then put it in a preheated oven at 180 C for 20-25 minutes. Meanwhile cook up the marinade with 2 cloves of garlic some onion and thyme or basil and 1/2 cup chicken stock.
Serve with some pomegranate seeds
And the taste...mmm...a lot like love, actually. Savory, sweet, sour and with the pomegranate seeds cool and crispy, just like love.
