Sachertorte


The famous Viennese sweet. It's not complicated to make as long as you have the right recipe. So far I have come across 4 different recipes and all of them leave out some point in the process of making. Obviously famous sweets have well kept recipes :)
What do you need for the Sachertorte?
butter-100g
6 eggs separate the whites and the yolks
1 1/4 cup all purpose flour
1/3 cup sugar
150g dark baking chocolate (I used one with 70% cocoa)
a pinch of salt for the whites

Make the dough first. Cream the butter and sugar. When creamy enough add the yolks one by one. Meanwhile melt the chocolate and beat the egg whites. Add the chocolate to the butter and mix. Add the flour to the whites and mix. Mix the two mixtures.
Line a cake mould with backing paper and pour in the mixture. Bake for 30 minutes at 190 C.

While the cake is baking look for mistakes in the recipes. When baked take it out and let it cool. Leave the recipes and make the syrup. For this you'll need 1/3 cup sugar 2-4 tbs H2O and a vanilla bean and 2tbs rum.

By now the cake has cooled cut it into half. Sprinkle half of the syrup on the bottom layer. Brush apricot jam on the surface. Cover it with the top layer and repeat procedure.

Melt 200g chocolate and cover the cake with it.
