The easiest chocolate cookies and the ban marie experiment

Fridays and Saturdays are the most boring days for going out and Thursdays and Sundays are the best. So, one Friday evening when the café was chez moi I decided to make something sweet. I took out the chocolate cook book and found a lovely recipie on choc cherry truffles, yummy. The tender taste of chocolate cream combined with the crunchiness of dark chocolate crumbs. Sweetness overwhelmed my senses. Just as I was about to make the shopping list I came across the line 'leave in the freezer overnight'. This was the sign to turn the page and look for something quick and simple. What can I say I love simplicity :)

On the next page there was a recipie that reqired little effort 200g melted chocolate a cup of cornflakes and 4tbs grated coconut.

The chocolate is melted in a ban-marie or over steam with 2 tbs butter. After it is melted let it cool a bit then mix in the cornflakes and the coconut. Stir it untill even and arrange it in papercups or in paper cones.

This makes an excellent desert after pizza and it's a terrific snack for goroup film watching.

The most interesting part about this recipie is that although it is very simple it allows creativity. So the variations can be with white chocolate, instead of coconut you can use wallnuts, hazelnuts, almonds, dry fruit or nothing.

This is something I'd make more than three times, despite the threats that my brother won't try to unstuck the pots the next time I try to melt chocolate over steam.:)
